• Classic Cones, 7342 State St. Road, Throop: satisfactory (April 29). Broken cooler gaskets observed on double door sandwich cooler and both soft serve ice cream machines. Ventilation hood filters require cleaning due to grease buildup.
• Rafy’s, 207 State St., Auburn: unsatisfactory (April 29). Foods not protected from contamination, temperatures not measured. The facility lacked a thermometer for evaluating cooking and hot holding temperatures at the time of inspection. The operator purchased a thermometer, brought it to the facility during the course of the inspection. Both thermometers were calibrated at the time of inspection. Improper cooling and refrigerated storage of potentially hazardous foods. Observed six chicken and cheese and five beef and cheese empanadas at 70 degrees Fahrenheit stored in plastic bins observed on top of the sandwich cooler. The empanadas were prepared for lunch service and not placed under refrigeration. The empanadas had been prepared within two hours, placed in the fryer, fully cooked and placed in holding. Improper hot holding of potentially hazardous foods. A shallow 1/2 restaurant pan containing roast pork in hot holding was observed to have an internal temperature of 128 degrees Fahrenheit. The holding unit had not been turned on. The pork had been in holding for less two hours. The pork was placed on the flat top and rapidly reheated to 165 degrees Fahrenheit before being returned to holding. The holding unit was turned on to ensure a holding temperature of above 140 degrees Fahrenheit. Cooked ground beef stored uncovered in a double door cooler. Food items stored directly on the floor of the double door cooler. Double door cooler lacks adequate seal at bottom. Sanitizing solution was not properly prepared at the time of inspection. Food contact surfaces are not adequately sanitized during the process of food preparation. Will reinspect within two weeks.

Under counter ice well containing ice for customers not properly covered to prevent contamination. Floor of walk-in cooler with food debris and spilled white drying liquid. Prepared egg patties, bagels and miscellaneous food items found on floor of walk-in cooler. Observed miscellaneous food debris on floors and underneath shelving in food preparation areas.
