鈥 Rose & Crown Tavern, 15385 Farden Road, Sterling: unsatisfactory (July 12). Food from unapproved source, spoiled, adulterated on premises. Bottles and cans of beer, wine and water being stored directly on top of stored ice used for patron drinks in the chest freezer behind the bar. The bottles cans and ice were moved to a cooler, with the ice being removed from customer service. Toxic chemicals are improperly labeled, stored or used so that contamination of food can occur. Unlabeled spray bottle of chlorine-based solution observed on the main preparation table in the kitchen. The spray bottle was removed from service, the contents of the bottle were discarded. The new batch of disinfectant was made and the bottle was properly labeled. Several one gallon jugs containing commercial degreaser and sodium hypochlorite actively stored on a shelf directly above the main preparation table. The gallon jugs of chemicals were moved to a suitable location within the kitchen, the shelving was properly cleaned to prevent cross-contamination. Small pile of garbage observed on the ground surface outside the back door of the facility.

鈥 CC鈥檚 Tavern, 17 Columbus St., Auburn: unsatisfactory (July 17). Food from unapproved source, spoiled, adulterated on premises. Mayonnaise stored in a plastic squeeze bottle for customer use on the self-service condiment counter observed to have separated into a semi-solid gel covered in yellow liquid with a strong rancid odor present. The bottle of mayonnaise was voluntarily discarded at the time of inspection. Food workers do not use proper utensils to eliminate bare hand contact with cooked or prepared foods. Observed a male food service worker holding and slicing a whole tomato with their bare hand. The tomato portion was voluntarily discarded at the time of inspection. Potentially hazardous foods are not kept at or below 45 degrees Fahrenheit during cold holding, except smoked fish not kept at or below 38 degrees Fahrenheit during cold holding. Multiple bottles of salad dressings and a jar of mayonnaise were not actively stored in the ice bath in the outdoor food trailer. All of the dressings required refrigeration once open. The internal temperatures of the products were between 85 and 86 degrees Fahrenheit, at the time of inspection. Four containers of salad dressings and half a jar of mayonnaise were voluntarily discarded at the time of inspection.
