Improper cooling and refrigerated storage of potentially hazardous foods. One cooler at the cookline noted with an ambient temperature of 47 degrees Fahrenheit. Two pans of tuna salad in the flip top portion of the cooler noted between 50 degrees Fahrenheit and 53 degrees Fahrenheit. Operator stated the tuna salad has been in the cooler since the night prior. All other TCS food items including deli meat temped at 47 degrees Fahrenheit. Correction: Two pans of tuna salad voluntarily discarded. All other TCS food items will be stored in a separate cooler until operating properly to keep potentially hazardous foods at or below 45 degrees Fahrenheit. Operator stated the cooler will be serviced. One spray bottle containing water stored above preparation table not labeled. Correction: Spray bottle labeled correctly. Fan guards in the walk in cooler noted not clean with dust accumulation. Inspector will revisit the facility to recheck cooler.
